Chicken dopiaza is one of the authentic Indian cuisine delicacies that are undoubtedly popular. The sweetness of this spicy dish comes from the abundance of onions that has been used in this recipe. “Dopiaza” actually means using two different cuts of onion and this is the basic point of difference with regular chicken curry. It is the mixture of roasted spices that plays the role of ‘hero’ in this recipe. The success of the dish remains in roasting the spices properly (make sure that you do not burn them) and the rest is going to be pretty easy when you follow the simple directions. The chicken dopiaza is a spicy dish and you can make it a side dish with vegetable fried rice or roti. The best option is obviously going to be butter nan!




  1. We will have to make the roasted spice powder mixture in the beginning. Put coriander seeds, cumin seeds, cinnamon sticks, whole cloves, and whole black peppercorns in a skillet and roast them till the spices give out a nice aroma. Let the roasted spices cool down a bit and then put them in a blender to make the fine power of the spices. 
  2. Wash the chicken pieces thoroughly and then keep them aside. Put yogurt, Kashmiri chilly powder, turmeric powder, paprika powder, and ground spice powder mixture. Blend the ingredients properly to make the marinade mixture and then put the mixture into the mixing bowl. Coat the chicken pieces thoroughly with the marinade mixture and then place the bowl in the refrigerator for at least an hour. 
  3. Heat sunflower in a pan and sauté green chillies and chopped onions till the onions become light brown in color. Now, add ginger and garlic and cook till the mixture becomes fragrant. Add chopped tomatoes and cook till they become thoroughly mashed. 
  4. Bring out the marinated chicken from the refrigerator and put them into the pan (along with the marinade mixture) followed by adding the cubed onions. Season with required amount of salt and then adjust the consistency of gravy by adding water. The gravy must not be too runny. Mix well and then cover the pan to cook for next 10 minutes. Remember to stir in between. 
  5. Reduce the heat and remove the cover. Allow 5 minutes of simmering time so that you get the desired consistency of gravy. Finally, remove the pan from heat and pour the dish in the serving bowl. Garnish with fresh cilantro before serving.
