Fried rice is mainly considered to be a dish in Chinese cuisine, but is well blended with Indian food culture. Here is for you, the easiest recipe for making fried rice that will not only entice you but also provide you with rich nutrients. This fried rice can be served for lunch or dinner along with common Indian side dishes like chicken or mutton curry.

Directions to prepare Indian Fried Rice:

  1. Soak the rice in water for about 20 minutes and then rinse thoroughly. Make sure not to squeeze the rice; else the grains will break.
  2. Heat 3 tablespoons of canola oil in a deep frying pan and fry the rice for 4 minutes. Pour boiled water into the pan along with salt and cook till the rice is soft, but not overcooked. Discard the cooking water and put the rice in a strainer to get rid of excess moisture. Put the cooked rice in a bowl and set aside.
  3. Put a little water in a pan and steam the vegetables (carrot and beans) for some time. This will take about 4 to 5 minutes but ensure that the vegetables are not overcooked. Strain and set aside.
  4. Put shrimps along with water and salt in a covered pan and cook for 8 minutes. Discard the cooking water and keep them with the boiled chicken pieces.
  5. Heat 1 tablespoon canola oil in the deep frying pan and scramble the eggs. Season it with a bit of salt and black pepper powder. Put in a separate plate and keep aside.
  6. Put 4 tablespoons of canola oil in the pan and sauté the garlic and onion for a couple of minutes or till they become fragrant.
  7. Now, put 4 tablespoons of canola oil in the deep frying pan and bring back the cooked shrimps and chicken. Add chilli vinegar sauce and hot & sweet sauce along with a little bit of salt and cook by continuous stirring. Make sure to coat the shrimps evenly with the sauce mixture and then put the scrambled eggs into the pan. Stir to mix well and then add the cooked vegetables. Stir thoroughly to blend them well and then add the cooked rice (little at a time and keep adding salt, pepper and little portions of soy sauce). Stirring 'thoroughly but delicately' is the trick to successfully making the dish.
