For this recipe, you will need:

  • 1/4 cup (60ml) of olive oil
  • 2 x 600g Coles Australian Lamb Rack Roasts
  • 3/4 cup (60g) panko breadcrumbs
  • 1/3 cup (25g) grated parmesan
  • 2 tablespoons oregano leaves
  • 2 tablespoons Dijon mustard
  • 200g punnet Perino tomatoes
  • 2 bunches baby broccoli, ends trimmed
  • 2 sprigs fresh rosemary
  • 1 egg
  • Garlic, as per taste
  • 1 tablespoon honey
  • 400g can cannellini beans, rinsed, drained
  • 1/4 cup (40g) chopped dry-roasted almonds
  • 2 tablespoons lemon juice
  • Sliced white sourdough bread, to serve

Step by Step Recipe for Parmesan-crusted Lamb:

For Lamb:

  1. Heat your oven for about 10 minutes on 200C heat.

  2. Fry your lamb racks rarely in a pan with minimal oil for about 3 minutes from each side.

  3. Mix honey and mustard in a bowl and roll the lamb in this honey-mustard and add salt and pepper.

  4. Grind the bread, parmesan, oregano leaves, rosemary and garlic into a powdered form. Beat an egg and mix the powder in it.

  5. Coat the mix on the lamb evenly.

  6. Now in a platter, spray the lamb racks with oil. On a medium heat, bake the lamb racks with tomato slices, for about 25 minutes. Your crusted lamb racks are ready to be served!

  7. Boil baby Broccoli for about 4-5 minutes. Rinse with cold water after boiling.

  8. Now mix beans, almonds, tomato with baby broccoli in a bowl and add lemon juice and olive oil in it.

  9. Garnish your lamb platter with this salad.
