Punjabi_Mutton_Curry

However, with the increasing care about fat-free diet, people are eager to decrease the amount of ghee in their dishes but at the same time maintain the superb taste of authentic Punjabi cuisine. The mentioned Punjabi mutton curry  recipe makes use of only two tablespoons of ghee to ensure a balanced diet.

1) Clean the mutton pieces thoroughly and then rinse them under running water. Keep them aside in a plate.

2) Heat mustard oil and ghee in a pan and add the cardamom, bay leaves, cloves, cinnamon, and black peppercorns into the pan and sauté till the spices become fragrant. Now, add the chopped onions and sauté till they become light brown in color. Make sure not to burn the onions; else the gravy will turn bitter.

3) Add ginger garlic paste and cook by constant stirring till the spice mixture becomes fragrant. Put turmeric powder, Kashmiri chilli powder, and coriander powder into the pan and keep stirring constantly. Add the mashed or pureed tomatoes and cook till the oil separates from the mixture. You have to make sure to stir constantly (also remember to keep the flame low); else there will be the risk of burning the masala mixture.

4)  Bring the mutton pieces into the pan and stir well to coat all of them evenly with the masala mixture.

5)  Put the yogurt in a bowl and beat hard to get a smooth mixture. Now, add the yogurt with the mutton mixture and stir well. Cook the entire mixture on medium flame for 5 minutes and then add 2 cups of water. Season with salt and add the coriander leaves along with Garam masala powder.

6)  Transfer the entire mixture to the pressure cooker and cook till you have four whistles (this cooking time is enough to make the mutton tender). In case the mutton is still hard, cook for few more minutes and wait for another whistle. Let the steam release in due time and then serve hot.
