Besan Sev – The Perfect Tea Time Snack

Besan Sev is a noodle like savory snack which is difficult to stop munching once you start. It is a great snack that is prepared on almost all festive occasions. These can be made in varied thickness. Fine sev are used for garnishing chaat whereas thicker sev are used as a snack.   It is made by using a Sev maker, a small appliance for making noodles.


2 cups Gram flour

1 teaspoon crushed carom seeds

1-1/2 salt

Red chili powder, according to taste

1/4 teaspoon black pepper

1/4 teaspoon asafetida (hing)

3 tablespoons oil

1/2 cup lukewarm water

Oil to fry

Steps to prepare Besan Sev


  1. Mix all the dry ingredients together. Add the oil and mix it well.
  2. Slowly add water to make soft and smooth dough. Cover the dough and allow to rest for about 15 minutes.
  3. Greased the Sev Maker with attachment. Place enough dough to fill the cylinder and close. On other side, heat the oil in a frying pan on medium heat to deep fry. ( Note that oil should be only moderately hot).
  4. Now hold the Sev Maker over frying pan, press the handle. Sev will start coming out of the Sev maker and fall in to the oil.
  5. Fry both sides till they become light golden brown, and oil will stop sizzling.
  6. Take them out over paper napkin to consume excessive oil.
  7. Serve after they get completely cool.
