Bhatura

Bhature or Bhaturas is the popular Punjabi recipe that tastes best with spicy chole (chickpeas). Chole Bhature is a perfect combination of nutrition and taste to tickle your taste buds. Add them to the menu of your special occasions like birthday parties, wedding occasions, family get together etc., to make them more unique.

Ingredients

1 cup= 250ml

Main ingredients

  • 2.5 cups wheat flour
  • 1 tsp salt or as per taste
  • 1 tablespoon ghee/oil/butter
  • warm water about ⅓ or ½ cup
  • vegetable oil  - for deep frying

Ingredients for fermentation (overnight)

  • 3/4 cup yoghurt, plain curd, cashew curd or dahi –150ml (curd)
  • ½ tablespoon brown sugar or sugar
  • ¼ teaspoon baking soda or ½ teaspoon baking powder
  • ¾ cup Maida (all-purpose flour)
  • ¼ water ( this is optional)

 

Directions:

  1. You will have to start the preparation a night before
  2. Take a bowl and add yoghurt , baking powder, sugar and all purpose flour
  3. For overnight process of fermentation mix all the 4 ingredients mentioned above.
  4. If you are using yoghurt that contains whey, then you don’t need to add water (1/4 cup) as mentioned in the list of ingredients above.
  5. If the yoghurt you are using is thick, then you need to add ¼ cup water to thin bhature batter.
  6. With the help of a cloth cover the bowl and keep it aside overnight in a warm place for minimum 8 hours to enable natural fermentation.
  7. The next you can see small bubbles on the surface of the mixture. This means that the mixture is all set to go to the next step, when tiny bubbles are seen on the surface.
  8. Take another bowl, add salt to the wheat flour and rub the butter of ghee into it using your fingertips. In this bowl, add warm water and the fermenting mixture. Make dough using both the mixtures.
  9. To make the dough silky smooth, knead it for 5-10 minutes. You can also add a little flour if you find it too wet. Gather the entire dough to make it a compact ball and cover the dough using a damp cloth. Again, keep it aside for at least 2 hours in a warm place.
  10.   The dough needs to be kneaded again.
  11.  Make 15 balls from the dough and roll it into discs of 5-6 inches. Heat ghee or oil in pan and deep fry them (bhaturas) same as you fry pooris.  Serve bhaturas with chole and sliced onions and lemon.
