Chicken cutlet is a small fried food containing, usually as main ingredients, mashed potatoes, egg, onion, spices, and herbs. The cutlet is normally circle shaped. The cutlet gained worldwide popularity, both as a delicacy and as a fast food. A potato-filled cutlet is called Aloo Tikki (Potato Rolls) and it is very popular in Asian countries. It is mostly eaten as snacks at home and is also popularly sold by roadside vendors. Meat cutlets called kebabs are made with minced mutton. Lightly spiced beef cutlets are a popular snack and appetizer among the different communities.

The chicken cutlet in the pizzaiola sauce is often served as a side dish in winter holiday meals, such as Christmas. In fast food cuisine, varieties exist without potatoes, but with cheese and beef often in a filling based on BBQ sauce. In Italy, Pizzaiola is the name of a tomato and garlic sauce normally served with meat. Each cook is free to create his own variations on this theme by adding herbs and spices, in the same spirit as for a pizza.

Ingredients for chicken cutlet 

  • 2/3 chicken (boneless)
  • 1 bag refrigerated diced potatoes and onions
  • 1 tbsp olive oil        
  • 1 clove garlic                      
  • 1 tbsp olive paste  
  • 1 tbsp white flour             
  • Salt (Optional)
  • Black Pepper to taste (optional)

Ingredients for pizzaiola sauce

  • ½ tbsp olive oil
  • 4 finely chopped onions
  • ½ tsp finely chopped garlic
  • ½ whole pack tomatoes
  • 2 tbsp tomatoes puree
  • ½ tsp dried Oregano
  • Black pepper (optional)
  • Salt (optional) 

Steps of Preparations for chicken cutlet 

  1. Before you start, put the serving dish in the oven at the lowest setting to keep the chicken warm while cooking the sauce.
  2. Flatten and tenderize the cutlets using a chicken ponder. Coat each cutlet with the flour, and shake off excess flour.
  3. Heat the oil in a pan over medium heat. Add the whole garlic cloves, sauté it for like 2 min, then add the cutlets. Cook till golden brown each side for about 2 min. Stir in potatoes and onions. Cook 2 minutes, turning occasionally with a plastic spatula. If mixture sticks, stir in 1 to 2 tablespoons water.

 

Steps of Preparation for Pizzaiola Sauce

  1. Heat the ½ tablespoons of olive oil in a medium saucepan and cook the finely chopped onions in it, stirring frequently, for 7 to 8 minutes.
  2. When the onions are soft, add the finely chopped garlic and cook for another 1 to 2 minutes.
  3. Then stir in the chopped tomatoes and the tomato puree, oregano, salt and black pepper.
  4. Bring the sauce to a boil.
  5. When finished, the sauce should be thick and rough in texture.
  6. Season the sauce with salt and black pepper.
  7. Arrange chicken on top. Spoon tomatoes on chicken, letting juices run over potatoes. Cover, reduce heat to low and simmer 20 minutes.
  8. Sprinkle with cheese, remove from heat and cover until cheese melts. If the name of a dish has "Pizzaiola" in it, you can be pretty sure it includes a tomato sauce, often with onions, peppers or mushroom season with salt and pepper. Remove the cutlets from the pan then set aside on the warmed serving plate in the oven.
  9. Add the pizzaiola sauce on the chicken cutlet and cover it for 2 min.
  10.  Serve and enjoy the delicious chicken cutlet in the pizzaiola sauce.
