Introduction of Oregano

Oregano is an excellent medicinal herb that is not only used as medicine but even for culinary purposes. Immense health benefits can be gained by using this herb that belongs to the mint family. The name Origanum originates from the Greek word oros which refers to mountain and ganos – joy. The Oregano plant typically grows to a height of 50 cm and the leaves of the plant are green and purple in color. The length of these leaves is about 2-3cm each.  The chemicals that give the medicinal herb the smell are limonene, thymol, ocimene and pinene.

Recipe to Prepare Grilled Chicken with Oregano and Garlic

The basic ingredients that are required to prepare Grilled chicken include:

Fresh lemon juice (1/4) cup, finely chopped fresh oregano (1/4) cup,  2tbsps kosher salt, 2 tbsp minced garlic, 2 tsp black pepper, 1/3rd cup olive oil, 12 chicken legs, 8 chicken breasts, and 5 lemons cut crosswise into thick slices of 1/3 inch.

Preparation of Grilled Chicken

The recipe of preparing Grilled chicken with Oregano is very simple and takes about an hour for preparation. All the ingredients are whisked together in a bowl and only ½ teaspoon of salt and black pepper are added to it. The olive oil should be added in slow streaming while whisking the ingredients like Oregano and lemon juice.

  • The excess fat from the chicken must be discarded and the remaining quantity of black pepper and kosher salt must be added.
  • The chicken can be cooked using a charcoal grill and for that, the vents on the bottom of the grill as well as on the lid must be open.
  • Light a big chimney starter of 80-100 charcoal briquettes and it must be poured evenly over one side of the base rack.
  • It is after 15-20 minutes when the charcoal turns grayish white you can sear the chicken legs for 3-4 seconds and by keeping your hand 5 inches above the rack.
  • The chicken legs can be seared in 3 batches on the grill rack that is lightly oiled and must be turned once and grill it till it is well browned.
  • The grilling procedure takes about 6-8 minutes and then it must be transferred onto a tray. The browned side of the chicken legs can be put on the grill without coals underneath and cooked for 15-20 minutes more.
  • You can transfer the chicken to a bowl and keep along with lemons and oregano for seasoning. Eat it hot it really tastes very yummy and the flavor of oregano and lemon is amazing.
