Daal Baati

Daal Baati has originated from the food lover state of India, Rajasthan. Daal Baati is by far one of the most known and cooked Rajasthani dishes. It is one of the essential dishes when you talk about Rajasthani delights and cuisine. Daal Baati is simple, healthy yet, super delicious. It consists of a soup of Daal which is cooked in several Indian spices and Baati. Baati is basically dinner rolls, which are baked purely from wheat. What makes Daal Baati a preference for a lot of people in dinner is that it is super light on your stomach and rich in taste.

Steps:

Preparation

  1. Mix all the pulses and wash them thoroughly.
  2. Add all the pulses in a pressure cooker with around 3 to 4 cups of water, Salt, Ginger Paste, and Turmeric.
  3. Cook on medium-high heat for a few minutes.
  4. Lower the heat and cook for some 10 minutes more.
  5. Take out the Pulses which should be soft by now.
  6. Now add Garam Masala and Mango Powder in pulses and mix thoroughly.
  7. For seasoning, heat the butter/ghee in a pan, add Cumin Seeds, Asafoetida, Chilies and Red Chili Powder. Add one tablespoon of water and stir slowly.
  8. Pour this sizzling seasoning over pulses and stir it gently.

For Baati (Bread Rolls)

  1. Preheat the oven to 350 degrees.
  2. Mix flour, semolina, salt and baking soda in a bowl.
  3. Add ghee and milk and knead it gently until it is in form of a dough.
  4. Place all the rolls in the oven for around 20 minutes.
  5. Turn them upside down and cook for another 25 minutes.
  6. You can slice the baati in two pieces.

After 15 minutes, make dinner roll shaped rolls.

Your Baati is ready to be served with a hot bowl of Daal. You can garnish Daal with coriander leaves or anything of your choice!
