Gajar HalvaGajar ka Halwa is a delicious sweet pudding also called as Gajrela in North India. It is truly a delight . It is a traditional Indian dessert adorned by almost everyone.  Lip-smacking gajar ka halwa can be made using red carrots and is nutritious too.

The best thing about this recipe is that you can easily store gajar halwa in your refrigerator for almost a week. You can prepare gajar halwa as a sweet dish for your guests in very less time, especially when you haven’t planned anything for a dessert.

Added nuts, ghee and milk make it a rich dessert that everyone  would love to eat.


1 cup = 250ml

  • 8 to 9 medium-sized tender and juicy carrots –yields 4-4.5 cups of grated carrots.
  • 4 cups organic milk (full fat)
  • 4 tablespoon ghee
  • 10-12 tablespoon regular or organic sugar as required
  • 20-25 whole cashews
  • 5-6 green cardamom – finely powdered or you can use 1/3 teaspoon cardamom powder.
  • 1 pinch saffron strands – optional
  • A handful of golden raisins

Step by Step Instructions for Gajar Ka Halwa Recipe

  1. Rinse the carrots and peel them.  Then grate the carrots.
  2. In a deep bottomed pan or kadai combine grated carrots and milk.
  3. Bring the mixture to boil on a low flame to medium flame and then simmer.
  4. Keep stirring the mixture in between while it is simmering.
  5. The carrots you have grated will cook in milk and gradually milk will evaporate and reduce.
  6. When 75% of the milk is reduced, add sugar, ghee and powdered cardamom to the mixture.
  7. Stir well, simmer and lower the flame and let it cook.
  8. Keep stirring the halwa in between.
  9. At the end add crushed saffron, cashews, raisins and simmer till the time the milk gets evaporated.
  10. You can serve gajar halwa hot, cold or warm.
