Galouti Kebabs have originated from City of Nawabs, Lucknow, India. The kebabs, just like the place of their origin, have a rich and royal history. In Hindi, ‘Galouti’ or ‘Galawati’ means something that melts in your mouth as soon as you eat it. The kebabs are so delicious and moist that they actually fuse inside your mouth and you can’t resist loving the taste.

The dish has a royal background. The passion for the meat of royals of Lucknow ended up with the invention of numerous mouth-watering  dishes. It was originally cooked for Nawabs of Lucknow. When the Nawabs got old and couldn’t chew meat in cubes or other forms, they made kebabs. The original recipe is believed to have a mixture of over 100 spices. So, today, Galouti Kebab is for everyone, irrespective of the fact whether he can easily chew meat or not.

Galouti Kebab is a fusion of minced meat and sizzling Indian spices. The meat is first marinated with spices and papaya so it becomes soft and moist. It is shallow or deep fried, which gives it crusted top along with a juicy and moist meat section from inside. For every meat lover, here is the must try Galouti Kebab recipe:

½ Kg Minced Meat

  1. 3½ Tablespoon roasted gram flour
  2. 1 egg
  3. 1 cup finely sliced and fried onions
  4. 1 Tablespoon sliced green chilies
  5. 2 tablespoons chopped fresh coriander
  6. Oil or ghee to fry onions and kebabs

Steps:

  1. Mix all the marination ingredients and marinate the minced meat in it for around 5 hours.
  2. After marination, mix the coriander, onions, green chilies, flour and egg (beaten).
  3. Mix this well with the marinated meat.
  4. Make kebabs (patty shaped) and place in the refrigerator for about 20 minutes.
  5. Now deep fry these kebabs until they turn brown from each side.
  6. Serve them in a dish with ground coriander leaves sprinkled on them.
