Motichoor laddoos are prepared from tiny gram flour balls or boondis that are deep fried and simmered in chashni (sugar syrup) until they absorb the syrup and plump up. These are then crumbled to give the round shape of ladoos!

Ingredients for Motichoor Laddoo Recipe

  • Gram Flour 2 1/2 cup
  • Sugar 1 1/3 cup
  • Milk 1/4 cup
  • Orange colour, as required
  • Ghee for deep frying
  • Green cardamom seeds 1 tbsp
  • Almonds blanched and slivered- 10
  • Pistachios blanched and slivered- 10

  1. Take three cups of water and add sugar in it. Boil the mixture till you get one thread consistency. Add little milk until the scum rises to the top and when it does, remove it. Add orange colour as desired and keep the syrup aside.
  2.  Make a thin batter of besan with three cups of water. Add colour as desired.
  3. Heat ghee in a deep frying pan or kadai. Pass the besan batter through a perforated spoon over the hot ghee into the kadai to prepare boondis.
  4. Take out the fried boondis from the kadai using a slotted spoon, drain thoroughly and put into the syrup. When the boondis absorb all the syrup,  add cardamom seeds and mix gently.
  5. Divide the total boondi mixture in twenty five equal portions. Now shape each portion into a laddoo.
  6. Garnish with slivers pistachios or almonds.
